メキシコのバハカリフォルニアのエンセナーダ太平洋沿岸沖で蓄養された新鮮な本マグロをメキシコから輸入して販売しております。水揚げ後、冷蔵完備した陸上トラックにて米国へ配送されるので鮮度が非常に良い高品質の本マグロになります。年間を通して、安定した出荷を行っておりますが、元々年中水温が低いため、身が非常に締まった食べ応えのある品質へとなっております。
特に夏場に関しては、他国の蓄養場水温は平均約25℃以上に対して、エンセナーダ沖の水温は20℃以下となっており、マグロの産卵活動も無く、品質は世界最高レベルの品質となります。
また、エンセナーダ沖で採れるイワシは、夏場が一番脂がある時期ともあり、脂を豊富に含んだイワシを餌としております。その結果、さらに高品質のマグロへと仕上がっていきます。
